PROFILE: Nose: Tart, woody, wine cellar. Palate: Matcha, grapefruit, dates and berries. Finish: Berries, woody and coffee.
STORY: This was To'ak's inaugural harvest, hailing back to the fine year of 2014. Over the course of time, it has aged like a wine. Some of the earlier, sharper flavour notes have softened, while other notes have surprisingly risen to the fore (grapefruit, Matcha). That hallmark undercurrent of berries still remains.
PAIRING RECOMMENDATIONS: Cognac (VSOP or XO), Zacapa 23 rum, Speyside single malts (Aberlour, Macallan), Blanton's bourbon, and even some peaty Islay single malts. Vintage port and sweet dessert wines also work well. For cheese, go with creamy and nutty cheeses like brebis, triple-cremes, mild brie, comté, and gouda.
