PROFILE: Nose: Elegantly floral with hints of berries, tamarind, cashew, and cinnamon. Palate: Baked butter cookies, fudge, hints of spices (cinnamon, clove), and slightly herbal. Finish: Toffee, nutty, and long lasting floral notes.
STORY: An unusually dry and cloudy year, combined with a mild roast and minimal conching, has produced arguably the most floral edition of To'ak chocolate thus far. This is our attempt at emulating the historic flavor profile of Heirloom Nacional cacao that has been grown in the wooded hillsides of Ecuador for centuries.
PAIRING RECOMMENDATIONS: Pairs beautifully with rich and floral single malts from Speyside, although peaty whiskies from Islay also work. Approachable Irish whiskies, smoother bourbons, and some rye whiskies are fun too. You can always count on añejo tequila, Zacapa 23 Rum, and sweet fortified wines. For cheese, opt for soft or semi-soft; the chocolate will bring out the nutty flavors of the cheese in a beautiful way. Brie is amazing.
