Ingredients: 80.5% Cacao beans, cane sugar
Variety: Heirloom Nacional
Wt: 50g (1.76oz)
PROFILE: Nose: Flowers and herbs, trace of nuts. Palate: Floral, woody, herbal, earthy, berries. Finish: Long, dark, rich and herbal.
STORY: Our goal with Dark was to highlight the emblematic characteristics of Nacional cacao from the Arriba growing region in Ecuador – akin to the French province of Burgundy in the wine world. The higher cacao percentage, longer fermentation time, and relatively shorter conch time have produced a strongly floral aroma that continues to intermingle with red fruits and earthy notes on the palate.
PAIRING RECOMMENDATIONS: We recommend our classics: sweet fortified wines like Port and Pedro Ximenez sherry work well. Zacapa 23 rum, triple-distilled Irish whiskey, and sherry-finished single malt Scotch whisky are also good pairing partners. In the realm of cheeses, we suggest the classics as well: Gruyère, Comté, aged Gouda, and Brie.
CERTIFICATION: Heirloom Cacao Preservation. Beyond Certifications (read more)
